Dried lemon peel and yellow apple, toasted nutty notes of hazelnut, thyme, anise seed, green peppercorn, and a generally lively herbal aspect. Fresh orchard fruit notes on the palate, creamy texture with very crisp, jumpy acidity through to the finish. Could potentially see a bit more time in the bottle....
