DO Tarragona has just announced significant changes to their Plec de Condicions which are working to shape their regulatory rules to reflect the current market trends of wine, especially when it comes to bubbles. They’ve long had the ability to produce vi d’agulla (a lightly-sparkling wine made by injecting CO2) as well as what’s deemed, “quality sparkling wine” or essentially “traditional method” wherein a secondary fermentation in the bottle produces the effervescence, aka “Champagne”. With their newest changes however, they’re now able to produce an “Ancestral” (aka Ancestrale in France). […]
